Ingredients
For the Cheese Layers
400 g (14 oz) feta cheese or a mix of feta & cream cheese (softened slightly for layering)
For the Mediterranean Tapenade
1 cup mixed olives (green & kalamata), finely chopped
2 tbsp sun-dried tomatoes, minced
2 tbsp fresh parsley, finely chopped
1 tbsp capers, chopped
1 tsp fresh rosemary or thyme, minced
1 small garlic clove, minced
2 tbsp extra virgin olive oil
Zest of ½ lemon
Black pepper, to taste
For the Topping & Garnish
3 tbsp chopped toasted almonds
2–3 whole green olives
Extra olive oil for drizzling
Fresh herbs (thyme, rosemary, or oregano)
Instructions
Each slice reveals a tapestry of flavor—salty, herby, nutty, and rich with Mediterranean soul.
🫒 Make the Tapenade:
Mix all tapenade ingredients in a bowl until well combined. Adjust seasoning to taste. Let it sit for 10 minutes to allow flavors to meld.
🧀 Layer the Terrine:
Line a small loaf pan or container with plastic wrap, leaving overhang. Begin with a layer of feta, gently pressing it flat with a spatula or spoon. Add a layer of tapenade. Repeat until you have 4–5 alternating layers, ending with cheese on top.
❄️ Chill & Set:
Cover and refrigerate for at least 4 hours or overnight. This allows the terrine to firm up and the flavors to deepen.
✨ Unmold & Garnish:
Invert onto a serving board and peel off the wrap. Drizzle with olive oil. Sprinkle toasted almonds on top. Add fresh herbs and a few whole olives for decoration.
🥖 Serve with:
Toasted baguette slices, crackers, or warm flatbread. Slice with a warm knife for clean edges.
