Loaded Chicken & Cajun Sausage Pasta Casserole Creamy Cajun Chicken and Sausage Pasta Bake

Ingredients:
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, diced
12 oz smoked Cajun sausage, sliced
1 tablespoon Cajun seasoning
1 yellow onion, chopped
1 red bell pepper, chopped
3 cloves garlic, minced
10 oz penne pasta
2 cups chicken broth
1 ½ cups heavy cream
1 (10 oz) can diced tomatoes with green chilies
1 cup shredded mozzarella cheese
1 cup shredded sharp cheddar cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch casserole dish.
Cook pasta according to package directions until al dente. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add chicken, season with Cajun seasoning, and sauté until browned and cooked through. Remove and set aside.
In the same skillet, add sausage slices and cook until browned. Remove and set aside with chicken.
Add chopped onion and bell pepper to the skillet, sauté for 3-4 minutes, then stir in garlic and cook for 1 minute.
Pour in chicken broth, heavy cream, and diced tomatoes with chilies. Bring to a simmer.
Add cooked pasta, chicken, and sausage back into the skillet. Stir in mozzarella and cheddar cheese. Adjust seasoning with salt and pepper.
Transfer mixture to the prepared baking dish. Bake uncovered for 15-20 minutes or until bubbly and slightly golden on top.
Garnish with fresh parsley before serving.
