Creamy Garlic Shrimp Over Mashed Potatoes

Ingredients:
For the Shrimp:
1 lb large shrimp, peeled and deveined
2 tablespoons olive oil
Salt and pepper to taste
1 teaspoon paprika
1 teaspoon garlic powder
For the Creamy Sauce:
2 tablespoons butter
4 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon Dijon mustard (optional)
Salt and pepper to taste
Fresh thyme leaves, for garnish
For the Mashed Potatoes:
2 lbs potatoes, peeled and cubed
1/2 cup milk (warm)
1/4 cup butter
Salt to taste
Instructions:
Prepare Mashed Potatoes:
Boil potatoes in salted water until tender (about 15 minutes).
Drain and mash with warm milk and butter until smooth. Season with salt. Set aside.
Cook Shrimp:
Toss shrimp with olive oil, paprika, garlic powder, salt, and pepper.
In a skillet over medium-high heat, cook shrimp 2–3 minutes per side until pink and cooked through. Remove and set aside.
Make Creamy Garlic Sauce:
In the same skillet, melt butter. Add minced garlic and cook for 1 minute.
Pour in cream and bring to a gentle simmer.
Stir in Parmesan and Dijon mustard. Season with salt and pepper.
Simmer until slightly thickened, about 3–5 minutes.
Assemble:
Spoon mashed potatoes onto a white plate.
Arrange cooked shrimp on top.
Pour creamy sauce over shrimp and potatoes.
Garnish with fresh thyme.
