Savory Oven-Roasted French Garlic Chicken
Ingredients:
Chicken: 4 bone-in, skin-on chicken thighs
Garlic: 10 cloves, minced
Herbs: 2 tsp thyme, 2 tsp rosemary, 2 tsp parsley (fresh)
Lemon: Zest and juice of 1 large lemon
Olive Oil: 3 tablespoons
Salt & Black Pepper: To taste
Optional Vegetables: 1 lb baby potatoes, 2 cups seasonal vegetables
Instructions:
1. Preheat the oven to 400°F (approximately 200°C).
2. In a large bowl, combine the chicken thighs, garlic, thyme, rosemary, parsley, lemon zest and juice, and olive oil. Season with salt and black pepper to taste.
3. If using potatoes and vegetables, toss them in the marinade as well.
4. Arrange the chicken and vegetables evenly on a baking tray, skin side up. Make sure the chicken pieces aren’t overlapping for even roasting.
5. Place in the preheated oven and roast for about 35–45 minutes, or until the skin is golden brown and the internal temperature reaches 165°F (about 74°C).
6. Let the chicken rest for a few minutes after removing it from the oven to allow the juices to redistribute.
7. Serve with your favorite side dishes or enjoy as is!
