Bruschetta Pasta Salad
Ingredients:
12 oz orecchiette pasta, cooked and cooled
3 Roma tomatoes, diced
1/4 cup finely chopped red onion
1/2 cup shredded Parmesan cheese
1/2 cup mozzarella pearls
1/4 cup fresh basil, chopped
1/2 tsp garlic powder
2 tbsp olive oil
1 tbsp white balsamic vinegar (or regular if preferred)
Salt and ground black pepper to taste
Directions:
Cook the pasta according to package directions. Drain and rinse under cold water to cool. Set aside.
In a large bowl, combine diced Roma tomatoes, red onion, basil, mozzarella pearls, and Parmesan cheese.
In a small bowl, whisk together olive oil, white balsamic vinegar, garlic powder, salt, and pepper. Pour over the tomato mixture.
Add the cooled pasta to the bowl and gently toss until evenly coated and combined.
Refrigerate for at least 30 minutes before serving. Toss again and adjust seasoning if needed.
