Cheeseburger French Fry Casserole

🧀 Ingredients

  • 1 lb ground beef
  • ½ onion, chopped
  • 1 clove garlic, minced
  • ¼ cup chopped dill pickles
  • 3 eggs
  • ½ cup mayonnaise
  • ½ cup half-and-half (or milk)
  • 2 cups shredded cheese (cheddar works great)
  • ½ bag frozen shoestring French fries
  • Salt, pepper, garlic powder to taste

  1. Preheat oven to 350°F (175°C) and spray a baking dish with nonstick spray.
  2. In a skillet, cook ground beef with onion, garlic, salt, and pepper. Drain excess fat.
  3. Stir in chopped pickles and spread the beef mixture in the baking dish.
  4. In a bowl, whisk together eggs, mayo, and half-and-half. Pour over beef.
  5. Sprinkle 1 cup of cheese over the mixture.

  7. Bake uncovered for 35 minutes or until fries are crispy.
  8. Sprinkle remaining cheese on top and bake until melted.
